Philly Cheesesteak Fries

A big plate of crispy fries loaded with tender strips of steak, roasted peppers and onions, and topped with scratch-made cheese sauce. Who needs a sandwich when you can eat your Cheesesteak this way?

Step 1 Marinade & Steak

Rib-eye or top round, thinly shaved 3 lbs.
Olive oil 4 fl. oz.
Worcestershire sauce 2 fl. oz.
Garlic, pureed 2 Tbsp.
Kosher salt 2 Tbsp.
Black Pepper, ground 1 Tbsp.
Step 2 Cheese Sauce

Butter 2 oz.
All-purpose flour 2 oz.
Milk 24 fl. oz.
Provolone cheese, grated 8 oz.
Kosher salt 1 tsp.
Black pepper, ground 1/2 tsp.

Simplot Select Recipe® Fries: Sea Salt Straight Cut Fries, Skin On 3/8" 6-1/4 lbs.
French fried onions, prepared 5 oz.
Preparation Instructions:
Step 1
In a large bowl, combine olive oil, Worcestershire sauce, garlic, salt and pepper. Stir to combine. Toss the thinly shaved meat with the marinade ingredients. Allow the beef to marinate for 1-2 hours before using.
Step 2
Melt butter in a saucepan. Whisk in the flour and simmer for a minute. Add the milk to the roux and whisk until smooth. Continue cooking over medium heat until mixture comes to a boil. Add the cheese and season with salt and pepper, whisk until smooth. Reserve warm.
Step 3
For each serving; heat 1 tsp olive oil in a large skillet or on a pre-heated griddle. Add 2-1/2 oz of peppers and onions. Cook over moderate heat stirring occasionally, about 2 minutes. Add 4-1/2 oz of steak and cook, stirring occasionally until just cooked through. Prepare 10 oz of the french fries according to the package directions. Transfer to a warm plate and top with the steak mixture, 2 oz of the cheese sauce and 1/2 oz of french fried onions.
