Side dish doldrums? Chase the blues away with this simple combination of redskins, bacon, and blue cheese.

Ingredient Weight Measure
Bacon, 1/2-inch dice 8 oz.
Vegetable oil 1 fl. oz.
Simplot RoastWorks®: Roasted Rosemary Redskin Potatoes 6/2.5lb 40 oz. 1 bag
Blue cheese, crumbled 5 oz.
Chives, chopped 3 1/2 Tbsp.
Preparation Instructions:
Step 1
Cook bacon in a sauté pan over medium heat until crisp. Drain, reserving 1 fl. oz. drippings, and set aside.
Step 2
Heat reserved bacon drippings along with vegetable oil in a sauté pan over medium-high heat. Add redskin potatoes and sauté 8-9 minutes until heated through. Set aside, keep warm.
Step 3
For each order; place 4 oz. of the redskin potatoes on plate. Top with 1/2 oz. of blue cheese crumbles and 1/2 oz. cooked bacon pieces. Place plate under broiler to melt cheese. Remove. Garnish potatoes with 1 tsp. chopped chives. Serve.
