Whole grain pasta stuffed full with an Italian cheese filling. Served with marinara sauce, roasted Mediterranean vegetables and topped with a creamy cheese sauce—include a side salad and you've got a complete, tasty lunch.

White cheese sauce 5 lbs. 9 2/3 cups
Manicotti portion, whole grain, pre-filled 50 each
Marinara sauce 3.1 lbs. 6 1/4 cups
Lettuce mix 2.03 lbs. 12 1/2 cups
Grape tomatoes, quartered 2 lbs. 50 each
Cucumber, sliced .78 lbs. 50 slices
Pre-portioned salad dressing, 2 fl. oz. 25 each
Preparation Instructions:
Step 1
Prepare Mediterranean blend, cheese sauce, and manicotti according to package instructions. Reserve hot.
Step 2
For each serving; place 2 oz. marinara sauce in serving container and top with 2 manicotti. Finish with 1/2 cup vegetables and pour 3 fl. oz. cheese sauce over vegetables. For salad; mix 1/2 cup of lettuce mix, 2 grape tomatoes, and 2 cucumber slices. Serve with dressing of choice.
