Taking comfort food "next level" with creamy housemade mac and cheese served over SIDEWINDERS™ Fries, made zesty with Tajin seasoning, lime zest and fresh cilantro.

Ingredient Weight Measure
Dry pasta, medium shells 16 oz.
Butter 4 oz. 1/2 cup
All-purpose flour 4 oz. 1/2 cup
Milk, whole 24 fl. oz. 3 cups
Heavy cream 16 fl. oz. 2 cups
Pepper Jack cheese, shredded 24 oz. 6 cups
Salt 1 tsp.
Black pepper, ground 1/2 tsp.
Red pepper flakes 1 Tbsp.
Simplot SIDEWINDERS™ Fries: Original Cut Clear Coated SIDEWINDERS™ Fries Original Cut 4 lbs. 1 bag
Cilantro. chopped Garnish
Lime zest as needed
Tajin as needed
Preparation Instructions:
Step 1
Cook pasta according to package instructions.
Step 2
Melt butter in a saucepot over medium heat. Add flour and cook approximately 3 minutes, stirring constantly, to make a roux. Whisk in milk and heavy cream and bring to a simmer to create a smooth white sauce. Stir in salt, black pepper and red pepper flakes. Add shredded cheese and whisk until cheese is melted. Add pasta to the saucepot and fold together gently. Keep warm.
Step 3
To serve; Prepare 6 oz. of SIDEWINDERS™ Fries according to package instructions. Place into a serving container and top with 10 oz. prepared macaroni and cheese. Garnish with chopped cilantro, lime zest, and Tajin.
