Krusteaz Devil's Food Cake Mix 2 lb.
Simplot Harvest Fresh™ Avocados: Avocado Pulp, Fresh 6/2lb 16 oz.
Eggs 4 each
Water 4 fl. oz.
Cream cheese, softened 32 oz.
Butter, softened 8 oz.
Simplot Harvest Fresh™ Avocados: Avocado Pulp, Fresh 6/2lb 16 oz.
Powdered sugar 21 oz.
Lemon zest 2 Tbsp.
Preparation Instructions:
Step 1
Place cake mix, avocado pulp, eggs and water in a mixer bowl. Using paddle, mix on low speed 1 minute. Scrape bowl and paddle. Continue to mix on medium speed for 2 minutes. Scale 1-1/2 oz. into paper lined cupcake pans. Bake in 300*F convection oven for 20-25 minutes until firm. Let cool.
Step 2
Whip the cream cheese and butter together in a mixer using the whisk attachment. Add the avocado puree and whip until combined. Slowly add the powdered sugar until frosting is firm and holds peaks. Lastly, add lemon zest and stir to combine.
