Balance health and indulgence with dark chocolate truffles made with creamy Simplot Harvest Fresh™ Avocado Pulp.

Ingredient Weight Measure
Simplot Harvest Fresh™ Avocados: Avocado Pulp, Frozen 12/1lb 1 lb. tray
Bittersweet dark chocolate, 60% cacao 20 oz.
Agave 2 Tbsp.
Pistachios, chopped (Optional) 1 cup
Powdered sugar (Optional) 4 cups
Special dark cocoa powder 2 cups
Unsweetened cocoa powder (Optional) 4 cups
Preparation Instructions:
Step 1
Thaw avocado according to package instructions. Purée until smooth. Place into large bowl.
Step 2
Melt dark chocolate. Add agave to melted chocolate and blend in avocado purée, fold in cocoa powder and mix until well combined. Do this by hand.
Step 3
Line a sheet pan with parchment paper. Roll the truffle mixture into small balls, about 1-inch or less in diameter.
