An inspired Mexican-style bowl with riced cauliflower, carne asada, guacamole and roasted corn and black bean salsa. Olé!

Simplot Harvest Fresh™ Avocados: Western Guacamole, Frozen 6/3lb 8 oz.
Simplot Simple Goodness™: Riced Cauliflower 1/20lb 32 oz.
Simplot RoastWorks®: Flame-Roasted Corn and Black Bean Fiesta Blend 6/2.5lb 8 oz.
Tomatoes, 1/4-inch dice 2 oz.
Jalapeño pepper, minced 2 Tbsp.
Cilantro, fresh chopped 1/4 cup
Carne asada, prepared, shredded 16 oz.
Lime wedges 8 each
Preparation Instructions:
Step 1
Thaw guacamole according to package instructions.
Step 2
Prepare riced cauliflower according to package instructions. Remove from heat, cover and hold warm.
Step 3
Prepare Fiesta blend according to package instructions. Allow to cool to room temperature. Stir in tomatoes, jalapeños, and cilantro. Hold for service.
Step 4
For each portion; place 6 oz. riced cauliflower into a serving dish. Top with 2 oz. Fiesta blend mixture, 2 oz. guacamole, and 4 oz. prepared carne asada. Garnish with 2 lime wedges.
