A new twist on a traditional benedict. Crispy hash browns inside a crunchy onion ring (to keep it all together), a poached egg, avocado slices and a sharp cheddar cheese sauce. Delicious!

Simplot Harvest Fresh™ Avocados Avocado Slices, Frozen 20 oz.
Simplot Freezerfrige® Potatoes: Shredded Hash Browns 6/3lb 80 oz.
Simplot Bent Arm Ale® Craft Beer Batter® Beer Battered Onion Ring 40 oz.
Kosher salt as needed
Black pepper, cracked as needed
Eggs, poached, warm 40 each
Sharp cheddar cheese sauce, warmed 20 fl. oz.
Chives, chopped 10 tsp.
Preparation Instructions:
Step 1
Thaw avocado slices according to package instructions. Thaw hash browns according to package instructions.
Step 2
For each order, cook two onion rings according to package instructions. Fill each onion ring with 2 oz. of thawed, shredded hash browns. Place onto flat grill and cook until golden brown and hot. Season with salt and pepper. Once cooked, place two filled onion rings onto a serving plate. Top each filled onion ring with 1/2 oz. thawed avocado slices, a poached egg, and 1/2 fl. oz of warm cheese sauce. Garnish with 1 tsp. chopped chives.
