An easy (and flavorful) sauté featuring Simplot Simple Goodness™ Provence Vegetable Blend.

Simplot Simple Goodness™: Provence Vegetable Blend 8/3lb 3 lb.
Butter 2 oz.
Artichoke hearts, quartered 12 oz.
Italian parsley, chopped 1/2 oz.
Pine nuts, toasted 2 oz.
Lemon zest 1 Tbsp.
Feta cheese, crumbled 2 oz.
Kosher salt 1 tsp.
Preparation Instructions:
Step 1
Cook vegetable blend in boiling salted water until just tender, drain well in a colander.
Step 2
Heat butter in large skillet over medium-high heat. Add artichoke hearts, pine nuts, parsley, lemon zest and salt. Sauté briefly until cooked through, stirring occasionally. Garnish with crumbled feta.
