Preparation Instructions:
- Step 1
- Thaw edamame and mango according to package instructions. Keep separate and chill.
- Step 2
- Prepare red quinoa according to package instructions. Chill.
- Step 3
- Gently fold the poke and mango together. Hold chilled.
- Step 4
- For each portion; in a clear cup layer: 3 oz. poke-mango mixture, 2 oz. shelled edamame, and 2 oz. quinoa. Finish with 1 oz. spring mix. Cover with lid. Serve with 2 fl. oz. dressing in a lidded portion cup.
