This side dish may be on the lighter side, but it packs a flavor punch. Offer it as a side choice on your family-style takeout menu. We think it would be a great accompaniment to our Chicken and Dumpling Casserole.

Ingredient Weight Measure
Prosciutto, diced 4 oz.
Simplot Simple Goodness™: Asparagus, Spears 6/2.5lb 40 oz. 1 bag
Olive oil 1 1/2 fl. oz.
Thyme, fresh, minced 2 tsp.
Kosher salt 1/2 tsp.
Black pepper, ground 1/4 tsp.
Preparation Instructions:
Step 1
Preheat oven to 425°F.
Step 2
Sauté diced prosciutto until crispy. Set aside.
Step 3
Place asparagus on a foil-lined sheet pan. Drizzle with olive oil and toss to coat. Season with thyme, salt and pepper. Roast until crisp-tender, about 10-15 minutes. Top with crisped prosciutto cracklings. Serve.
