Sometimes you just need comfort food. This casserole is nostalgic and, dare we say it, absolutely delicious any time of day.

Colby Jack cheese, shredded | 8 oz. | 2 cups |
Preparation Instructions:
- Step 1
- Preheat oven to 350°F.
- Step 2
- In a large sauté pan, cook bacon until almost crisp. Add the onions and continue cooking until bacon is crisp and onion is softened. Drain.
- Step 3
- In a large mixing bowl, whisk the eggs with milk, garlic powder, salt and cayenne pepper.
- Step 4
- Spray a half-sized hotel pan with cooking spray. Layer half of the Tater Gems® on the bottom of the pan. Top with the cooked bacon and onion. Top with half the cheese. Layer remaining Tater Gems® on top. Pour egg mixture over the top of the pan and sprinkle with remaining cheese. Cover and bake 55-60 minutes. Uncover and continue baking an additional 5-10 minutes until cheese is melted and egg is cooked through.
