Tater Gems® Casserole

Sometimes you just need comfort food. This casserole is nostalgic and, dare we say it, absolutely delicious any time of day.

Ingredient Weight Measure
Bacon, sliced 16 oz.
Onion, diced 6 oz.
Eggs, beaten 36 fl. oz. 18 each
Milk 24 fl. oz. 3 cups
Garlic powder 1 tsp.
Kosher salt 1 tsp.
Cayenne pepper 1/4 tsp.
Simplot Traditional Potatoes: Tater Gems® 6/5lb 32 oz.
Colby Jack cheese, shredded 8 oz. 2 cups
Preparation Instructions:
Step 1
Preheat oven to 350°F.
Step 2
In a large sauté pan, cook bacon until almost crisp. Add the onions and continue cooking until bacon is crisp and onion is softened. Drain.
Step 3
In a large mixing bowl, whisk the eggs with milk, garlic powder, salt and cayenne pepper.
Step 4
Spray a half-sized hotel pan with cooking spray. Layer half of the Tater Gems® on the bottom of the pan. Top with the cooked bacon and onion. Top with half the cheese. Layer remaining Tater Gems® on top. Pour egg mixture over the top of the pan and sprinkle with remaining cheese. Cover and bake 55-60 minutes. Uncover and continue baking an additional 5-10 minutes until cheese is melted and egg is cooked through.
