Hollandaise sauce, prepared 40 fl. oz.
Aji amarillo yellow hot pepper paste 4 fl. oz.
Simplot Traditional Potatoes: Old European Potato Pancake 6/5lb 40 each
Chorizo sausage, cooked and drained 2 1/2 lbs.
Cotija cheese, crumbled 10 oz.
Eggs, sunny side up or poached 40 each
Tajin seasoning 1/4 cup
Scallions, charred 40 each
Preparation Instructions:
Whisk the pepper paste into the prepared hollandaise sauce, hold warm. For each serving; prepare 2 pancakes according to the package directions. Top each with 1 oz. of chorizo, prepared egg and 2 fl. oz. of aji amarillo hollandaise. Sprinkle with Tajin and garnish with two charred scallions.
